Chemical properties
Starchy white powder. Odorless and tasteless. Dissolves in water at room temperature to form a colloidal solution. It is easily soluble in water under stirring. It can also be moistened with ethanol first and then added to water. Making the aqueous solution acidic will generate free acid that is insoluble in water and reduce the viscosity. More stable to alkali. Adding metal salts will form various metal salts that are insoluble in water, so they are not suitable for highly acidic foods.
