This will prevent the cherries from swelling, cracking, or shrinking and deforming, and maintain their original texture. The acid can be citric acid or edible phosphoric acid, which not only inhibits the growth of microorganisms, but also prevents the cherries from producing an undesirable sour taste. Use sodium benzoate as a preservative, or use sodium benzoate and sodium sorbate at the same time, and the dosage should not exceed. If you want to increase the hardness of cherries, add a small amount of calcium phosphate or propionic acid solution.
2. Soaking
