Pressing method
There are two processes for extracting edible oil from plants, which are divided into chemical oil extraction method and physical oil extraction method, which are what we usually call leaching method (chemistry) and pressing method (physics)
Pressing method The pressing method has a long history. Its process is relatively simple. After the oil is steamed and fried, it is mechanically squeezed out of the oil. The ancient pressing method requires heavy physical labor from the operators. The residual oil content in the extruded oil residue (oil cake) is quite high, thus wasting extremely precious oil resources. The modern pressing method is an industrialized and automated operation, but the problem of high residual oil content in the oil residue still cannot be solved.
During the process of oil being squeezed out, when the oil enters the press chamber of the oil press, the pressure increases as the press chamber rotates. The seed material is continuously squeezed as the oil is extruded, and the pressure particles in direct contact generate pressure on each other, causing plastic deformation of the seed material, especially at the rupture and bonding of the oil film. In this way, after being squeezed out of the frying chamber, the pressed material is no longer a loose body, but forms a plastic body called an oil cake. Due to the dual effects of temperature and pressure during squeezing, the protein will continue to deteriorate, which will then affect the plasticity of the pressed material. In short, only an appropriate degree of protein denaturation can ensure the best oil extraction effect.
