物理性质:白色至浅黄色结晶性粉末，无臭，溶于水，稍溶于乙醇，不溶于乙醚。10%水溶液的pH值为6.8~7.4。
生产方法：由抗坏血酸与碱性钙盐中和而制得。鉴别方法取少量本品溶于水，加2滴甲基红指示剂，用氨水中和，然后加稀盐酸至酸性，加入草酸铵溶液生成草酸钙沉淀。此沉淀不溶于乙酸而溶于盐酸。
用途：GB2760—2011规定为暂时允许使用的食品用香料。可以作为保鲜剂用于水果蔬菜，作为抗氧化剂用于火腿、肉类及荞麦粉等。作为非离子表面活化剂和营养剂用于护肤养发。作为杀菌剂用于镜片的清洗。作为钙盐它又可以预防骨质疏松，用在茶及饮料中可降低血压。研究结果还表明：Vc-Ca阻止癌细胞的DNA的合成，对恶性肿瘤有抑制作用，可用于癌症的临床辅助治疗。
使用限量：FEMA （g/kg）: 去皮或预切的鲜水果1.0（以水果中抗坏血酸钙残留量计）；去皮、切块或切丝的蔬菜1.0（以蔬菜中抗坏血酸钙残留量计）；浓缩果蔬汁（浆），按生产需要适量使用
